Mexico: Chiapas Jacinto

Smoky. Bittersweet. Chocolate.

This simple, high-grown Chiapas is transformed into a rich, chocolatey dark roast. Due to the elevation and quality of this bean, I am able to bring it to a smoky dark roast without the threat of ashy flavors. This coffee is grown by a collection of smallholders in the Jaltenango and Villa Corzo regions of Chiapas, Mexico, near the border with Guatemala.

Cup Characteristics: Smoky, bittersweet, medium body, mellow acidity, intense sweet aroma
Roast: Light French (dark)
