New coffee and pour-overs this week

We are always looking for ways to make what we do at the Imperial Farmer's Market better. I am excited to bring you a slightly faster brewing experience. As many of you know, you can't rush good coffee. But it turns out you can push the envelope a bit. I have recently purchased four Bonmac pro cones. They look much like the red pour-over cones I have been using but they have a few very important changes. They are crafted for the coffeeshop environment and so they have two drip holes instead of the one, and ridges that go all the way to the top of the cone. These differences allow me to brew a cup in 3 to 3.5 minutes instead of the average 4-5 minutes that I had been getting with the red cones. In order to produce the same cup, though I have had to make the grind more fine and I have to be even more careful with my pouring technique. I have done this for two reasons. 1. I want to be able to serve you a bit faster. 2. With these cold days, I am looking for anything I can do to keep your coffee hot.

I am also happy to announce that I have a new single-origin available. This one is from the Huila region of Colombia. It is a medium roast and an all-around balanced cup with flavors of sweet almond and raw cocoa. To me it is both special and yet very familiar. I will write more about this coffee next week, but for now, just come by and try a cup and/or take a bag home to enjoy.
