The Guara Verde (green macaw) is the national bird of Honduras. This special lot from the Becamo exporting company represents careful selection and processing from 250 farms in the western regions of Honduras. I tend to gravitate more towards single-farm lots, but this blend was a standout and shows great attention to detail. The cup is fruit forward with strawberry, peach, citrus and tropical notes. It has a base of caramel and dark chocolate and a sparkling lime acidity. Honduras has great climate for coffee but has been a bit behind their neighboring countries (Guatemala, Costa Rica) in terms of knowledge and processing. This is a great example of the potential in Honduran farms.
